Mother Nature is really doing a number on us.  I don’t know how many more storms we are going to be able to handle.  I just can’t imagine over a million people without power.  Michael sure did a lot of damage to a lot of people.  I don’t think I could make it through a hurricane.  Momma Said, “If there were a giant sign that said “BIG CHICKEN” it would point right at me.”


I saw on the news that the wind actually blew a train off the tracks.  How could anything withstand that kind of power?  In West Virginia, we don’t have to worry about hurricanes we get winds but not like that.  We have our share of floods and snow storms, so I guess you have to pick your poison.  If you want to live at the beach then you have to contend with hurricanes.  Live in the mountains and shovel snow, so toss the coin on what you want to live with.

I don’t have to worry about my house blowing away in a snow storm so I guess I will stick with my mountains.  More diversity and beautiful scenery, especially this time of year, we are getting some cooler weather now so the leaves will really start to turn.  Mother Nature is at her worst with the storms and at her best with the beauty of season changes.

This time of year, everything is winding down and getting ready to go to sleep for the winter.  I still need to clean up some flower beds and mow some leaves. Amber is still making mud pies and Bailey is really slowing down.  I hope she does alright through the winter her arthritis is really getting her down.  I wish animals had longer life spans because it is really difficult for me to see her like this and she is only 12 years old.  Momma Said, “I guess that is really 84 in dog years so she is no spring chicken.”  It is not easy for me to say that nether am I.

Broccoli Cheese Soup

Ingredients
•2 cups sliced fresh carrots

  • 2 cups broccoli florets
    •1 cup sliced celery
    •1-1/2 cups chopped onion
    •1/2 cup butter
    •1/4 cup all-purpose flour
    •1 can (10-1/2 ounces) condensed chicken broth, undiluted
    •4 cups whole milk
    •1 cup of cheddar or marble cheese, shredded

Directions

  • In a large saucepan, bring 2 quarts water to a boil. Add carrots, broccoli and celery; cover and boil for 5 minutes. Drain and set aside.
  • In the same saucepan, sauté onion in butter. Add flour and stir to make smooth paste. Gradually add chicken broth and milk. Cook until mixture thickens, about 8-10 minutes. Add vegetables; heat until tender. Add cheese; heat until cheese is melted. Yield: 6-8 servings (2 quarts).
